This simple, light pesto pasta recipe with roasted cherry tomatoes and creamy ricotta cheese by Simply Delicious is a delightful, easy any day dinner idea. This could as well be a go to recipe for that indoor date night especially when paired with a complimenting bottle of wine.

For this lovely dish, here are the ingredients that you’ll need:

  • Cherry tomatoes
  • Balsamic vinegar
  • Olive oil
  • Pasta (any pasta shape of your choice)
  • Ricotta 
  • Basil pesto

Now to begin, you’ll have to pre-heat the oven and place the tomatoes on a sheet pan and drizzle the cherry tomatoes with the vinegar, oil, salt and pepper then allow to roast until the tomatoes are blistered and  released their juices.

Cook the pasta in a large pot of salted, boiling water until firm to the bite then drain the pasta leaving 2 cups of cooking water. Then remove the stems from the roasted tomatoes then and to the pasta along with all of their cooking juices, the ricotta, basil pesto and a few tablespoons of pasta cooking water then toss and add more water until the pasta is well coated with the sauce before finally serving with fresh basil leaves and more ricotta.
